Two Super Spring Salad Recipes!

Spring is here and so many fruits and vegetables we missed all winter are back in season.  Here are two delicious and easy recipes for putting some spring into your salad and wowing your family and guests.  Note: Grilled Chicken or Shrimp on either can turn this salad into a meal.
Spring Greens Fruit Salad (Crowd Size)
Ingedients
  • 1/2 cup champagne vinegar or white wine vinegar
  • 1/4 cup olive or vegetable oil
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried marjoram leaves
  • Dash of salt
  • 6 cups mixed baby greens
  • 2 cups sliced strawberries
  • 2 peaches, pitted and thinly sliced
  • 1 cup diced Gouda cheese (4 ounces)
  • 1/2 cup hazelnuts, toasted and coarsely chopped
Directions
  1. Mix vinegar, oil, honey, marjoram and salt.
  2. In large serving bowl, mix baby greens, strawberries, peaches and cheese. Add vinegar mixture; toss to coat. Sprinkle with hazelnuts.

Spring Raspberry Salad
Ingredients
  • 1/4 cup chopped walnuts
  • 2 tablespoons sugar
  • 1 bag (5 oz) torn mixed salad greens
  • 2 containers (6 oz each) fresh raspberries (2 cups)
  • 1/2 small red onion, thinly sliced (1/2 cup)
  • 1/2 cup chopped dates
  • 1/3 cup balsamic vinaigrette dressing
  • 2 oz goat cheese, crumbled
Directions
  1. In 8-inch nonstick skillet cook walnuts and sugar over low heat about 10 minutes, stirring constantly, until sugar is melted and walnuts are coated; cool and break apart.
  2. In large bowl, combine salad greens, raspberries, onion and dates. Just before serving, pour dressing over salad; toss gently to coat. Top with cheese and walnuts.

A Story of Inspiration and Dedication! Camper Lisa in CO!

Hi Christina - I figured I would send you some pictures and tell you my story! - I only have a few pictures, and not whole body shots, but hey there is definitely a difference!  

I have pretty much struggled with my weight for quite some time and really needed something new and fun - after having my kids I really needed to get my body back.
So I do have to give credit to my co-worker Celicia who joined boot camp with me in June of last year - she is the one who found you guys first and I said I wanted to go with her and actually we have another co-worker - Shauna - who after Celicia and I started and told her how much we like it - she signed up for the Boot camp in Littleton, CO!!  

I started at about 268lbs last April/May and had lost about 15lbs before I started with Code Pink Boot Camp on June 1st of 2010, I just needed something different and I knew the gym was not the answer for me - I was excited about this boot camp!!   I was in the 6pm class in Westminster, CO and oh boy - I did my first class in 90 degree weather and the whole time I was thinking to myself "what was I thinking" and "what did I sign up for”! HA - The pounds started dropping off and I got addicted to boot camp pretty fast - I found myself signing up for the 5:30am class as I couldn't do the 90 degree days anymore - and then signing up for the rest of the year! - This brings us to now and I’m at about 205lbs right now!!!! - I’m so excited that this is working for me and I have to say I have enjoyed working out every morning in boot camp!

Every single class since I started in June of last year is completely different - you never get bored and Tiffany always has something new for us - It is a high energy and fun class and something you won't find at any gym!!!!  Code Pink Boot Camp has really been the best thing that has ever happened to me!! (Ok except my kids and Hubby!)

I’m going to keep going as I still would like to lose another 45 or so pounds and I know I will get there with this boot camp!  Thank you so much!

I have attached 3 pictures - the first one Old-Lisa is from about last year in July 2010 - about 1 month into bootcamp - then the other 2 pictures NewLisa1 and NewLisa2 were just taken in December!

Code Pink Boot Camp Success Story- Yvonne
A wonderful glimpse into a Camper and her trainer’s perspectives

Yvonne’s Story:
A note to tell everyone the goal of getting physically fit has to start somewhere.  I’ve been heavy and out of shape for a number of years and decided I needed to start on the path to a healthy weight and incorporate exercise regularly into my routine.

I’ve completed two Code Pink Boot Camp sessions and have signed up through the end of the year.  I realize that I have a lot of weight to lose and that it will take a while.  I’ll continue with Code Pink to hit my ultimate goal of being fit.  I long for the day when I can work out to maintain my level of fitness and weight.

The first session I lost 9 ½ pounds and am waiting for my evaluation from the second session.  Based on my scale at home, I should be down another 9-10 pounds.  My clothes are loose and I’m now pulling items that I used to wear and had to stop because they were too tight.

I was apprehensive the first day that I went to Code Pink Boot Camp.  Here I was, obviously out of shape, and the others in the class were in shape.  Cindi, the trainer of the 5:30-6:30 a.m. Irvine location camp made me feel comfortable right away.  She encouraged me and didn’t make me feel awkward with my inability to keep up with the rest of the group on the cardio or the exercises.  She stresses that you push yourself to do more each day.  As the session progressed, Cindi would comment on my progress.  She is interested in helping each one of us reach our fitness goals.

One of the best results of this experience has been the camaraderie with the other women.  Not only are they nice people, but they are also very encouraging.    Exercise is so much more fun to do with a group than by yourself.  Plus, the group atmosphere keeps you coming back and Cindi varies the program, having us do different exercises and activities each day.

What Does Yvonne's Trainer Say?

I want to recognize Yvonne Herrell, from Irvine 5:30am. She has an amazing perseverance, a warm, caring heart, and is an inspiration to everyone in our camp.  She has attended 5 days a week from her first session, and has only missed days for vacation.  Yvonne takes every new activity in stride, with energy and enthusiasm.  She welcomes and encourages all of our new campers every session, especially those that seem to be brand new to exercise or haven't exercised in a long time, as that is where she started.  In the first 3 months she saw rapid weight loss, avg. 10 lbs per month.  She still saw a continued weight loss, but it slowed down.  She attended the nutrition seminars almost every session, wanting to make sure to stay on top of the latest information Jem would share.  She was starting to plateau, and rather than get frustrated and give up, she discussed with me different ways to try and break the plateau.  She added in extra activity during the week and on weekends, making nutrition and fitness a lifestyle.  Recently, we took a hard look at her diet, and after meeting one on one with a nutritionist, we confirmed she wasn't eating enough.  Skeptically, she followed their advice, and after the first week, she broke the plateau!  Throughout this, her commitment to boot camp never wavered, and I know she will continue to see more results and reach her goals - although I can see that she has made her fitness and nutrition a priority and a lifestyle that will be with her forever.   This is why Yvonne Herrell is an amazing woman to me!
